I explain the process of substracting off bias in this accelerometer video. That may help you figure out how to subtract off the bias of your initial pitot probe data. I’ve also done this pitot project before and have posted a video on Youtube about Converting Pitot Probe Data to Windspeed. There is a typo in the video though. V1 is supposed to have a sqrt()).
